We are farmers and artisan cheesemakers in Ferndale, Washington, in the beautiful Pacific Northwest. We are known for being a seed-to-cheese farm, using milk we produce from cows we raise, fed from the crops that we grow. We make authentic heritage cheese from Italy, using techniques taught to us by the artisans, technicians, and food scientists of that country. All handmade in a closed-loop system right where the animals live.
A traditional Italian-style cheese, Caciotta is a mild semi-aged cheese with a soft texture. Tasty and versatile for anyone's cheese palate.
